Recipe: Cornmeal Pancakes

I grew up in MA and I am a bit of a maple-holic. I love grade B maple syrup too! It it not as subtle as Grade A but if you love maple flavor it is the best way to go.
No, they don't taste like a corn muffin. I love corn muffins, but they are usually either a little on the dry side, or they are really heavy. They are usually grainy too. These pancakes are light and they weren't dry. They were had less of a corn taste than the corn muffins I've had.
These sound delicious. I love corn based baked goods. I too cannot use a carton of buttermilk. I end up throwing it out too often. I use the powdered buttermilk at times, but seem to have more success when I quickly "make" buttermilk with the lemonjuice-in-milk trick (1 tablespopon of lemon juice or vinegar to 1 cup of milk, let sit for 5 minutes to develop).

mmm, i love cornmeal in stuff like this. i've made cornmeal waffles, which are awesome, but never pancakes. i'll have to try these.
